What Grows When?

Folks want to know what kind of crops are available at what times of the year.  Its a good question, with a good answer for Southern Illinois......with our long mild springs and falls farmers can use season extension techniques to grow great veggies a little earlier or a little later than expected.  Our farm's philosophy is that we work to use the power of the sun or shade cloth to give us more growing time, but we will not use artificial means to grow things that really shouldn't be grown in a particular season.  For example, in the fall we will put low tunnels over spinach, lettuce, and kale crops so that they won't be hurt by early winter winds or cold blasts.  What we won't do, is try to create an entirely artificial environment by trying to grow tomatoes in January.
