Chard Cheese Pie

adapted from The New Laurel's Kitchen


2 c. cottage or ricotta cheese

2 eggs, beaten

juice of 1 lemon

1/2 tsp. salt

4-6 c. chopped Swiss Chard

1/2 c. bread crumbs

paprika

 

Lightly steam swiss chard until just tender. Drain well.

Preheat oven to 350. Generously grease an 8-by-8 baking dish.

Beat together cottage cheese, eggs, lemon, and salt. Stir 1 c. of this mixture into the chard and press it into the baking dish. Spread remaining cottage cheese mixture over the top and sprinkle with bread crumbs and paprika. Bake until set, about 1/2 hour. Let stand several minutes before cutting into squares. Makes 4-6 servings.

*Variation - substitute kale, spinach, or beet greens, or a combination of greens, for the chard.

Golden zucchini and heirloom large tomatoes are the stars for this week's share.  Look for green garlic, ie not yet dried, and more blueberries....the ones the Japanese beetles did not eat!
