Salad Dressings

Why not make a fresh small batch of dressing for amazing taste?

Salad dressings can be a mystery especially if you have ever read the label on a purchased dressing. Thickeners, stabilizers, emulsifiers.... a list of a lot of things that.... well.... do we really need them? My opinion is NO! Why not make a fresh small batch of dressing for amazing taste? Just shake again before using.

 

Balsamic Dressing

1/3 cup extra virgin olive oil

2 tablespoons balsamic vinegar

Salt and pepper, to taste.

The most simple of dressings is a good balsamic vinegar mixed with a good extra virgin olive oil and a bit of salt and pepper.

Greek Style Dressing

1/3 cup extra virgin olive oil

¼ cup red wine vinegar

2 tablespoons fresh parsley, chopped

2 tablespoons fresh oregano, chopped (dried also works, use 2 teaspoons)

¼ small clove of garlic, very finely minced

Salt and Pepper, to taste

Mix dressing together with whisk, or in a small jar. Refrigerate for at least 10 minutes to let flavors meld together. Pour over your salad.

Citrus Dressing

1/3 cup granulated sugar

1/3 cup water

1 clove of garlic, minced

1/3 cup shredded carrot

2 tablespoons of rice vinegar or cider vinegar

2 tablespoons orange juice

1 tablespoon fresh lemon juice

1 tablespoon soy sauce

½ teaspoon chili sauce, or a few chili flakes (to taste)

Combine sugar, water and garlic in a small sauce pan. Cook over medium-high heat until sugar dissolves (2 – 3 minutes). Remove from heat and stir in the remaining ingredients. Allow mixture to cool.
