Zucchini Dessert Squares

3 cups flour

1 1/2 cup sugar

1 cup cold butter or margarine

1/2 tsp cinnamon

1/2 tsp salt

Filling:

8-10 cups peeled and cubed zucchini

2/3 cup lemon juice

1 cup sugar

1 tsp cinnamon

1/2 tsp nutmeg

In a bowl combine flour, sugar, cinnamon and salt.  Cut in butter until crumbly. Reserve 3 cups.  Pat remaining crumb mixture into bottom of 9 x 13 sprayed pan.  Bake at 375 for 12 minutes.

Meanwhile, place zucchini and lemon juice in a saucepan and bring to a boil.  Reduce heat, cover and cook 6 - 8 minutes, until zucchini is tender.  Stir in sugar, cinnamon, nutmeg and simmer for another 5 minutes.

Mixture will be thin.  Spoon over crust, sprinkle with reserved crumbs.  Bake at 375 for 45 minutes or until golden.
